CHILLED CUCUMBER SOUP
- 3 medium english cucumber
- peeled, seeded and chopped
- ½ a sweet onion, finley chopped
- ½ a head of fennel, finely chopped
- juice of one lemon
- 1 tbsp finely chopped mint
- 1tsp finely chopped dill
- salt and pepper
- 2-3 cups of chilled kombu stock
